Macro Minute: Crockpot Barbacoa

The easiest way to prepare a healthy dinner is to use the crockpot. You can throw everything in the crockpot in the morning, turn it on and by the time you get home from your day, it's all ready to go!

2 to 2.5 lbs of beef stew meat

1 red onion, diced

1 can of mild green chilies

2 packages of Frontera Slow Cooker Barbacoa Sauce (found at Target)

1) Toss the meat in the crockpot  

2) Pour the sauce packets on the meat, top with diced onion, green chilies and cook on low for 8-10 hours.

3) Shred meat if desired. We like it with a bag of frozen riced cauliflower, sautéed with some paprika.
