As we continue on this Nutrition Challenge, I highly encourage you to eat real food. Supplements are just that, to supplement your nutrition, not to replace it.
I take very little supplements. What I take is: fish oil, liquid vitamin D3, protein (after workouts) and sometimes a pre-workout (most days I choose coffee instead).
I strive to eat veggies in all of my meals, even breakfast. My goal is to get 6 large servings a day.
i don't like raw vegetables unless they are on a salad or it's celery. My favorite way to eat them is roasted. You can roast any veggie (fresh or frozen) on a cookie sheet, throw some seasonings on it, maybe a little oil, and bake at 425 degrees for 20-35 minutes or until they appear roasted.
My go-tos are:
Pre-cut cauliflower crumbles. Find these at Target or Hyvee in the pre-cut fresh fruit and vegetable section. Steam in the bag. They can be used in nearly anything!
And ugly beans.
Take frozen green beans, line cookie sheet with foil. Add a bit of oil (we use avocado oil), salt and pepper (or any seasoning! Put in oven then turn oven on. Bake at 450 for 30-35 minutes until they look slightly burnt.
These reheat easily and I eat them as you would French fries! I go through a 5# bag in a little over a week.
